Keep in closed container in a cool place or in refrigerator; one ounce will reconstitute to about 4 ounces. Don't rinse dried mushrooms; soak in hot water for 15-20 minutes before using. Strain through paper toweling, cheeseclosth or paper coffee filter, discarding any grit. Add the soaking liquid to sauces, risotto and soups. Chop softened mushrooms and add to whatever you're cooking.
