A cross between a garden leek and bulb garlic, this jumbo variety is usually 3-4 times as large as regular garlic. Each bulb usually contains 8 cloves and can grow as large as a grapefruit. Some people prefer elephant garlic for its sweet and mild nature which renders it much less caustic but at the same time less flavorful. Fans also appreciate the fact that there are less individual cloves to peel and chop for any given recipe. Elephant garlic grows in California and is newly harvested during the summer months.
