Catsmo artisan smokers, in Walkill, N.Y., is a small , privately owned company founded in 1995 by Robert Simon who still oversees all operations today. This is the salmon he refers to as regular , though it is actually anything but. With its rich, buttery textue and sweet lacing of fruit-wood smoke, it is Catsmo's biggest seller. They use a perfectly balanced blend of apple and cherry woods which result in a delicate smoke and silky texture.
