This cheese is crafted from 100% pasteurized sheep's milk and undergoes an aging process of about three months in a controlled environment. The wheels are turned and washed regularly to maintain their quality. Once a rind forms, they are coated with butter to keep the moisture intact and prevent cracking. The resulting rind is dark brown and mottled, while the cheese's interior is semi-hard with a pale straw color that deepens near the rind.
Flavor-wise, Cave Aged Marisa offers a complex profile with a creamy texture that balances sweet, tangy, and lactic notes. It has been described as having aromas of butter, mushrooms, and roasted hazelnuts, alongside floral hints.
