Fiscalini San Joaquin Gold Cheese

Handcrafted on a sustainable California farm, San Joaquin Gold cheese from Fiscalini is a testament to American artisan cheesemaking. Made from raw cow’s milk and aged for 12 months, this cheese draws inspiration from the great Italian hard cheeses, yet it carves its own identity with a distinctly regional character. The aging process develops a rich, buttery texture and a deep, nutty flavor profile that lingers on the palate, offering complexity and intensity without overwhelming the senses.

San Joaquin Gold’s firm yet supple body makes it ideal for both slicing and grating. Its golden interior and natural rind speak to the care and tradition behind its creation, while the use of microbial rennet ensures a vegetarian-friendly product. Enjoy the cheese on its own as part of a curated cheese board, or shave it over roasted vegetables and fresh salads to add savory depth. It melts beautifully into risottos or polenta, lending a luxurious finish to both classic and contemporary dishes.

For a memorable pairing, serve San Joaquin Gold alongside toasted nuts, dried apricots, and a drizzle of honey, or match it with a crisp white wine or a light-bodied red. Whether featured at a festive gathering or enjoyed in a quiet moment, this cheese offers a sophisticated taste of California terroir, crafted with dedication and respect for tradition.
