PDO cheese since 2009, Langres AOP is a pasteurized cow's milk washed rind cheese. Its name comes from the town of Langres in the Burgundy region. Langres AOP is never flipped during aging so it has a dip on top called "fountain" in French. The tradition was to pour Champagne or hard local liqueur on it before tasting. Thanks to its fruity taste and flavor, Langres AOP is a great introduction in the washed rind category.
