Spotted Trotter Uncured Lomo, 2.5 lb

Spotted Trotter Uncured Lomo showcases the artistry of traditional whole muscle charcuterie. Crafted from premium pork loin, this lomo is carefully wet-brined with white wine, fresh herbs, garlic, and aromatic spices, infusing the meat with nuanced flavors and subtle complexity. After a ten-day cure, the loin is gently coated with Spanish pimentón and bright orange zest, then left to mature for up to eight weeks. The result is a beautifully marbled, unsliced lomo with a soft, delicate taste and a tender texture that reflects the meticulous attention to detail in its preparation.

The lomo’s flavor profile is sophisticated yet approachable, with the sweet smokiness of pimentón and citrusy lift from orange zest complementing the natural richness of the pork. Each slice offers a melt-in-your-mouth experience, ideal for savoring on a charcuterie board or as the centerpiece of a gourmet antipasto platter. Its unsliced, whole-muscle format allows you to cut to your desired thickness, ensuring optimal freshness and presentation for every occasion.

Serve Spotted Trotter Uncured Lomo alongside soft-ripened cheeses and crisp white wines or pilsners to highlight its delicate notes. Ideal for entertaining or as a luxurious addition to your pantry, this lomo brings a taste of Spanish-inspired craftsmanship to your table.
