Togo-Su Wa Oxtail Dashi

Dashi, a fundamental component of Japanese cooking, is a stock made with steeped kombu, or seaweed, and dried bonito, resulting in an umami-packed broth. This oxtail dashi vinegar adds deeply savory oxtail to the mix, resulting in a surprisingly complex, bold vinegar. Meaty and mellow, with warm undertones of nutty brown rice.
