The best truffle soils are to be found in southern France, along a line from the Perigord through the Quercy and the Gard to Tricastin. After a series of tactile examinations, we make a first knife cut into the truffle. This enables us to guarantee perfect flavor, texture, marbling and ripeness. The weight lost by the fresh truffles during boiling is reclaimed in the precious juice that is put to so many uses in haute cuisine.
