🇫🇷 Marquis de Lafayette Brie: A classic French Brie with a smooth, buttery texture and a delicate, fruity aroma. Its creamy, luscious and of course addictive nature begins with the Brie’s velvety white, edible rind that softly ripens the cheese from the outside in, made from pasteurized cow’s milk with a high moisture content of 60%. The extra cream and higher moisture content create a delightfully refreshing flavor favored as a dessert cheese. 

🇳🇴 Norseland Gjetost Ski Queen: A typically Norwegian full fat whey cheese with a fudge-like texture and sweet caramel flavour that was fist made in Gudbrandsdalen valley more than 130 years ago.  Anne Hov, a farmer’s wife, was the first person to think of pouring cream into the kettle of whey.  Her “fat cheese” got a higher price than her ordinary cheese and butter, and she is reputed to have saved the valley from financial ruin in the 1880’s. Ski Queen’s unique sweet taste is caused by the natural caramelization of milk sugar during production.  The colour is brown and the cheese is sliceable. 

🇬🇷 Kynthos Halloumi: Halloumi is a fresh, un-ripened frying cheese similar to a clean, light and lactic tasting mozzarella if it were much firmer and slightly saltier. Halloumi has been increasingly eaten all over the world since its creation in what is now known as the Middle Eastern island country of Cyprus back during the Medieval Byzantine period which started in 395 AD. Halloumi is widely recognized throughout the Mediterranean as the crowning cheese jewel of Cyprus cuisine as well as in neighboring Turkey and Greece.
