This cheese is presented in a 7 lb wheel and features a mottled natural rind that is a mix of white, gray, and brown, complemented by rosy undertones.
Aged for 60 to 70 days, Caspian has a distinct dual texture: a more crumbly center encased in a smooth, creamy layer just below the rind. The flavor profile is vibrant, with bright and acidic notes, evolving into flavors of cultured butter and mushrooms at the outer edges.
