Characteristic and unmistakable. The rind of this artisan cheese is brown. Firm and easy to cut, it is yellowish-ivory in color and has a variable number of small, irregularly distributed eyes. With a more evolved dairy flavor and aroma, hints of butter and toasted nuts (hazelnuts), and a medium-length aftertaste, it has developed the typical Mahón-Menorca "bouquet" (ripening: 2-5 months).
