Cheesemaker Helen Feete designed this cheese to showcase the milk from their herd of seasonal grazing dairy cattle. Appalachian is aged at least three months in the Meadow Creek cellars, where it forms a white coat of penicillium molds that compliments its vibrant flavor. Creamy and tart with a hint of mushroom earthiness, this mild yet complex cheese is a crowd-pleaser.
